Description

Ground from hand-stripped moringa leaves, the powder settles to a fine khaki dust, dry against the fingers, with a faint peppery bite reminiscent of watercress or radish top. It comes from the slender tree grown beside wells and kitchen gardens across South Asia and East Africa, valued as much for its shade as its leaves. Moringa has been an old ally of household cooks for generations, its leaves stirred into stews, dals, and porridges as a matter of course rather than remedy. The leaf is valued for its concentrated minerals and amino acids, and taken as a daily support for ordinary energy and general nourishment. We source ours from smallholder farms in Tamil Nadu, where leaves are hand-stripped from the branch — never the stem, which is fibrous and bitter — and shade-dried within a day of harvest to preserve their color and chlorophyll. Sun-drying is faster but bleaches the leaf and much of its nutrient content along with it; shade-drying costs more time for a darker, more potent powder. Stir a teaspoon into soup, dal, or a glass of water at midday, when the afternoon flags. The flavor is green and slightly bitter, better folded into something savory than sipped alone.
