Two unlikely companions share this tin: valerian root, earthy and a little medicinal, cut into rough amber chips, and whole hop cones, papery and pale gold, their scent somewhere between straw and beer before it's ever brewed. Together they make a blend that smells more like a hedgerow than a tea shelf, and steep into a liquor the color of dark tea, faintly bitter, undeniably herbal. Valerian has been dug and dried in support of sleep since antiquity, and hops, better known for beer, carry an old, quieter reputation of their own as a calming herb, once sewn into pillows for restless sleepers. Herbalists have long taken this particular pairing to support relaxation and settle the mind before bed, the bitterness of both roots muted somewhat when they're brewed together rather than alone. The valerian here is root only, no stem or leaf, sourced from cultivated European stock and dried at low heat to preserve its notoriously volatile compounds; valerian loses potency quickly if roasted or over-dried, so timing in processing matters more with this root than with most. The hops are whole-cone, not pelletized, from the same aromatic varieties brewers prize, chosen for scent over bittering strength. Every batch is tested for purity before blending. Steep a rounded teaspoon at full boil for seven to eight minutes, covered, since this blend wants a long, hot steep to draw out what it has to give. Drink it in the last half hour before bed, not before driving or anything that needs a clear head. Some evenings call for exactly this: bitter, warm, and final.
