Description

Cold-milled to a fine, tawny meal, flax carries a faint hay-like smell and a texture just short of gritty. Stirred into liquid it thickens within minutes, turning faintly gelatinous — the same mucilage that makes it useful in baking as much as at the table. Flax is among the oldest cultivated plants on record, grown for fiber and food since the Neolithic and worked into the porridges and dense breads of Northern Europe for as long as anyone kept written record of it. The seed is long taken to support regular digestion, thanks to a fiber content few other pantry staples can match. We use the golden variety rather than brown, milder in flavor, and mill it cold in small batches rather than sell it whole — whole flaxseed largely passes through the body undigested, its oils locked behind a hard seed coat. Cold-milling keeps the friction-heat low enough to protect those same oils from turning rancid before the bag is even opened. A tablespoon or two stirred into oatmeal, yogurt, or batter, always with a full glass of water alongside — the fiber does its work best with plenty of liquid to move through. Keep it refrigerated once opened, as you would any freshly milled thing. Small, dull gold, and unfussy about how it's used.
