Ridged, pale-green seeds, oval and faintly striped, with an aroma that hits somewhere between licorice and fresh hay. Crush a few between your fingers and the scent sharpens considerably, sweet, warm, faintly medicinal in the way good herbs often are. Steeped whole, they turn the water the color of weak straw and leave a clean, aniseed finish.
Fennel seed has been chewed and brewed after meals across cultures from the Mediterranean to South Asia for a very long time, valued as a digestive aid taken at the close of a meal to settle a full stomach. It is an old, unglamorous remedy, no exotic sourcing story, just a seed that has earned its place in the cupboard through plain usefulness.
These seeds are whole rather than ground, which matters, since fennel's volatile oils begin fading the moment the seed is cracked, so whole seed keeps its potency far longer on the shelf. Ours are grown in southern India's Gujarat region, sun-dried on open threshing floors in the old way, then hand-sieved to remove stems and chaff. Each lot is tested for purity before packing.
Crush a teaspoon lightly with the back of a spoon to open the seed, then steep in just-boiled water for eight to ten minutes, since fennel wants time to give up its oil. Drink it warm after a heavy dinner, or keep a jar by the stove for whenever the meal runs long. Plain, patient, and reliably kind to the stomach.
