Description

Silvery-green sprigs of dried rosemary, needle-thin and still faintly resinous, gathered into a fist-sized bundle and wrapped tight in unbleached cotton twine. The scent needs no flame to reach across a room — sharp, resinous, a little like pine crossed with something more savory — and only grows more concentrated once lit. Long before it settled into the kitchen spice rack, rosemary carried heavier duties across Mediterranean and northern European folk custom: sprigs burned at sickbeds and doorways, tucked under pillows against bad dreams, carried to weddings and funerals alike as an herb of remembrance. Old household lore held that where rosemary thrived by the door, the woman of the house ruled it — and that a dying bush meant misfortune coming. Ours is field-grown in the Mediterranean basin and cut in early summer, when the oil content in the needles peaks and the plant is at its most fragrant. Small batches are bundled by hand while the stems are still pliable, then racked in open air to dry slowly over several weeks, which keeps the color from fading to gray. Light the tip until it catches, then blow out any open flame and let the bundle smolder and smoke, tracing it through doorways and corners the way sage is more famously used. Rosemary makes a gentler, more everyday alternative — a bundle you might reach for weekly rather than saving for the rare occasion.
