Description

Curled into small green pearls, Jade Milk Oolong releases a scent closer to warm cream and orchid than to any leaf you'd expect from a tea plant. The pellets unfurl slowly in hot water, opening into whole, dark-edged leaves and giving up a liquor that is pale gold, silken on the tongue, and carries that same buttery note through three or four steepings. Oolong sits between green and black tea in its oxidation, and the partial withering and rolling that define it have long been valued in Chinese and Taiwanese tea culture as a craft worth the same unhurried attention paid to a good wine. Taken daily, a light oolong is an old companion to conversation and slow afternoons rather than any particular remedy, a plant simply well made. The cream note here is not an additive but a character of the Jin Xuan cultivar itself, a Taiwanese varietal bred in the 1980s for exactly this soft, faintly sweet quality that appears naturally when the leaf is processed with care. Grown at elevation in central Taiwan, where cool mist slows the leaf's growth and concentrates its aromatics, each lot is hand-rolled in small batches and tested for purity before export. Steep at 195°F for thirty seconds on the first pour, adding ten seconds to each steeping after, since the leaves have more to give than a single cup allows. A gaiwan suits it best, but any small pot will do. Pour slowly, and let the cream note arrive on its own.
