Description

Berries of the black elder, Sambucus nigra, wild-picked across Europe and simmered low with raw honey and a measure of zinc into a dark, spiced syrup, its anthocyanin content standardized so each bottle carries a consistent, verifiable dose. The syrup pours thick and nearly black, with a jammy sweetness cut by clove and a faint wine-dark tang from the berries themselves. Elderberry has been gathered at the turning of the seasons for generations, the hedgerow remedy of European grandmothers who simmered the berries down each autumn as the first cold winds arrived. Zinc has long kept it company in folk practice, added for its own reputed support of the body's defenses through the changing weather. Take a teaspoon daily as a matter of course through the cold months, or more at need — stirred into a mug of hot water with a curl of lemon peel, or taken straight off the spoon. Tart, dark, and warming, closer to a mulled cordial than a medicine. This is a food-based syrup meant to support the immune system through ordinary seasonal strain, not to treat or prevent illness, and it is not a substitute for medical care when illness takes hold. Keep it in a cool, dark cupboard and use within a season of opening.
